Nirapara Appam Podi

Nirapara Appam Podi is a ready flour mix formulated for making soft Kerala appams. The blend of rice and other ingredients (as per pack) is prepared to give lacy edges and a soft centre when fermented and cooked in an appachatti. To use, mix the flour with water (and yeast or fermented batter, if mentioned on the packet) to form a batter, allow it to ferment as directed, then pour into an appam pan and swirl to spread. Cover and cook until the edges are crisp and the centre is cooked through. Keeping Nirapara Appam Podi at home makes it easier to serve traditional appam with stew, egg curry, or vegetable kurma without grinding rice and coconut from scratch.
